Slovak Recipes: Making Pirohy

Hello, it's me Vlado. I must confess I am not responsible for this special dish that we have for you. This is the wonderful recipe of my very good friend, Hanka.

Pirohy is a traditional Eastern Slovak dish, which resemble large raviolli with a potato filling. I hope you enjoy this special meal.

Rolling of the pastry
The first step of this recipe is to prepare the pastry from which we create the pirohy. Mix flour, egg and water, together with a pinch of salt, to form the pastry. Then roll the pastry out until it is half a centimetre thick.

Creating circle shapes
Once you have done the rolling, take a cup or a glass and cut out circles from the pastry.

Filling the circles
After creating the circles, we fill them with a potato mixture, which is made of mashed potatoes and onions. Before this we had fried the onions in oil and then mixed them together with the potatoes.

Shaping up the pirohy
Once we have filled a circle of pastry with the potato mixture, we close the circle creating a crescent moon shape. We then close up the edges, in a lace pattern.

Pirohy before cooking
So now the pirohy are ready to be placed into a pot of boiling water. We put them into the boiling water and mix them occasionally. We have to be very careful when we are mixing them that we don't break them. And when do we know that they have been cooked? It is easy, when they float to the top we know they are ready to come back out again.

Serve with cream!
Once the pirohy are back out of the water, they are ready to be served.

They taste best when they are garnished with fried onions and served with sour cream.
